This classic Greek favorite adds a little zest to the standard breakfast. Not much salt is needed as you get that from the feta.
1 tablespoon butter
1 tablespoon minced onion
1 tablespoon black olives (sliced)
3 whole eggs
1oz light crumbled feta
2. Sauté the onion for a minute or two then add the olives and sauté for a minute more.
3. Meanwhile, beat eggs and then pour into pan. Add feta cheese, and cook, stirring occasionally to scramble.
4.Season with salt and pepper.
